For centuries, the North-American bison (buffalo) was considered essential
to the survival of the first inhabitants of North America. It provided
them their food, clothing, fuel and shelter (tepees). Be it smoked, dried
or crushed with wild berries, the bison provided an all year-round supply
of minerals and vitamins. It is said that, once upon a time, in the Great
Plains, one could hear the hoofs of 60 000 000 buffaloes. Surely, high
demands for their pelts, sport hunting and political pressures almost
exterminated these vast herds.
In the 1900th, the Canadian and American governments adopted measures
for the protection of the bison which enabled a slow resurgence of the
Bovidae family in national parks of both countries. Bisons have a life
span of 25 years, and some have been known to even reach 47 years. It
is now estimated that there are more than 200 000 bisons living in Canada.
With such numbers, their survival is now assured and we can now again
appreciate the taste and the exceptional nutritional value of the bison
meat.
Why eat bison meat?
Simply
for the taste! Bison meat is the tastiest red meat on the
market today. It is easy to prepare, tender and naturally nutritional.
The meat is dense; therefore satisfying with smaller portions and does
not shrink while cooking. Bison meat has a low rate of cholesterol and
is an excellent source of red meat, low in fat, rich in protein and unequivocally
delicious.
